Target 10/28

I ran into target today to get ink for my printer and here's what I found. They were having 75% off lots of small kitchen appliance. I have been wanting a waffle makers for a while and I got a deal today. We also go back and forth with the toaster oven we get rid of them then we want one again so we're trying one again. They also have microwaves, blenders, George Foreman things and much more.

Pureed Pumpkin

Safeway had their Saturday and Sunday sale last week and I got 2 pumpkins for $4.99. I made pumpkin puree today, I had to call my friend Hannah for some tips since I was doing a huge pumpkin and not pie pumpkins like on thriftymom.com. Thanks Hannah!

First off we have our medium sized pumpkin.

Cut the pumpkin in half lengthwise.


clean out all the seeds and guts.

I enlisted the kids to help. Lennon helped too he just had to leave before I got the camera out. Because the pumpkin was so big I had to cut it into quarters. I baked half of the pumpkin at a time.


Place skin up in a 9x13 pan. Add a little water and cover with foil. Bake at 375 degrees for about 1 1/2 hours.

The skin will still be firm but soft on the inside when it is done. I like how Hannah described it - she said "it's like a potato after it has baked" it will smoosh.


Let the pumpkin cool so you can handle it. Then you peel off the skin and put it in the food processor or blender. (Since Hannah told me about the potato thing it made me think of how you can squish the potato out of the peel after it has baked. So I kind of smooshed the pumpkin in the pan to help release it from the skin a bit) Then I used my hands and sometimes a paring knife to get the skin off. It was like peeling sunburned skin! well not that thin of skin but you get the picture. Sorry if that was gross!
Finally I poured premeasured pumpkin puree into plastic containers and plastic Ziploc bags. All of the bags are 1 cup and the plastic containers (except 2) are 2 cups. I ended up with 18 1/2 cups of pureed pumpkin and still have another one to do! Yeah I'm getting out those pumpkin recipes.

Chicken pot pie

We do chicken pot pie many ways around our house. It is one of my kids favorites. Sometimes I use already made crust, other times i make the crust. Sometimes I only crust on top other times I put in on top and bottom. Sometimes I use frozen, canned or fresh vegetables. Anyway we do it the kids love it. For this pie here's what I did.
I made the crust.
Chicken however much you like. I used 2 big breast here.
Vegetables however and whatever you like. I steamed fresh broccoli and baby carrots and used canned corn here.
1 can cream of chicken soup
1/4 cup milk
salt and pepper to taste
Here's what it looked like before I put the top on and cooked it.

After baking at 350 degrees for 40 minutes. Here's what it looked like.


Zucchini chocolate chip muffins

I got this recipe from allrecipes.com
Ingredients
1 1/2 cups flour I used (half wheat half white)
3/4 cup sugar
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 egg
1/4 cup vegetable oil
1/4 cup apple sauce
1/4 cup milk
1 tbl. lemon juice
1 tsp. vanilla
1 cup shredded zucchini I also peeled mine
1/2 cup chocolate chips (you don't have to put them in but I love them)

In a bowl combine flour, sugar, soda, cinnamon and salt. In another bowl combine egg, oil, apple sauce, milk, lemon juice and vanilla. Stir in dry ingredients. Stir in zucchini and chocolate chips. Bake 350 degrees for 15 minutes for mini muffins.

Walgreens 10/28

Every time I go to Walgreen's they are out of the deals I want. Here is what they had. I am still trying to learn drugstore shopping.

Cheesy Sausage Potatoes

Last week Safeway had all their sausages on sale and there was a great coupon because it's Oktoberfest. I bought two Hillshire Farms Beef Polska Kielbasa. Today I used one of them to make dinner. I had my two helper chefs, Meghan and Abby.






First the girls helped me peel 6-8 potatoes and I cubed them.


We boiled them for about 7 minutes.


Meanwhile I sliced the sausage and chopped onions and bell pepper and sauteed until the sausage was brown.

We drained the potatoes and placed them at the bottom of a 13x9 baking dish. Then we placed the sausage mixture on top of the potatoes and then put cheese on top of that and sprinkled a little pepper. We baked at 350 degrees for 25 minutes and here is our final result.


It was good. Bill said it was a hit.

Beet Lover Recipe-Beetroot Salsa


Bill actually likes beets. I think they taste like dirt. He is always looking at recipes that are good for runners and we test them out. You can eat the root and the leaves of beets. They only have 36 calories and have 300 mg of nitrates per 4 ounces which is supposed to improve endurance. Anyways enough of the science lesson.
We made Aussie-Style hamburgers with Beetroot Salsa however we didn't care too much for the burgers I think it had too much mint. I think they would be good with less or no mint. Anyways I'll give the beetroot salsa recipe and then the burger after in case you want to go for the full effect.
Beetroot Salsa
1 15 oz can of small beets drained and chopped ( I guess in Australia they call them beetroots instead of just beets)
1 small red onion finely chopped
1/2 cup chopped cherry tomatoes quartered
1/4 cup chopped coriander
2 tablespoons finely shredded mint
1 tablespoon red wine vinegar
mix all of the ingredients together. We put the salsa on our hamburgers (just Bill and I) and everyone else tried with Doritos chips.
Hamburger Recipe
1 lb of ground sirloin
1/2 cup breadcrumbs
1/2 cup finely chopped mint
1 tablespoon paprika
4 slices reduced fat Swiss cheese
Combine the beef, breadcrumbs, mint and paprika in a medium bowl. Season with salt and pepper. Mix until well combined. shape into four patties (I made 5 just fine). Cover with plastic wrap and put in fridge for 30 minutes to rest. Grill until cooked to liking. Put a slice of cheese on each patty just before removing from grill.

Nutrition per hamburger: 566 calories, 52 grams carbohydrates (5 grams fiber), 44 grams protein, 20 grams of fat. Exchanges 4 protein, 3 starch, 1 vegetable, 1 dairy

Quick Safeway Trip

Bzzzzzzz! I went over as well this week. I ran to Safeway tonight to get the last few things I wanted from their Sat/Sun sale and spent 21.88 making my grand total just over $55 still pretty good though. Here is what I purchased.

2 Gallons of Milk just because 4.78
2 Pumpkins on bogo sale 4.99
2 Wheat Thins 1.94
2 Triscuits 1.94 (on sale 1.47 ea and had $1/2 coupon for both crackers)
2 Lunchables with water 2.19 for both (on bogo sale 4.19 plus 2-$1 coupons)
4 boxes of golden grain pasta 2.06 (on sale .79ea plus 2-55cents off 2 coupons)
2 Orowheat whole grain english muffins 3.98 (My coupon wouldn't go through on this one so I should have only bought 1 at 1.99 but I didn't) These came with $1 off coupon when you buy Safeway eggs or butter so at least I got that much out of this deal.
I'm going to bake and puree the pumpkins for pumpkin bread, pumpkin soup, pumpkin smoothies and whatever else pumpkin I might want to have this fall.

Weekly review

I did horrible this week. Last week I spent $66.04 which was over. This week I spent $101.45. I am noticing we are drinking away our money. I spent a lot on drinks. I have had sickies in my house so I needed to hydrate them and I guess we need to drink more water. This is really helping me. Next week I guess I can't spend any money so I will need to get creative with what we have. Way to go Rachel on your weekly budget. Maybe I'll try for the month. Other blogs that have such a low weekly budget double coupons. We don't have that by us, so should we double our budget. No, I'm joking. I'll try and tighten things up and find more coupons.

How am I doing so far?

Tomorrow is Thursday and so far I have spent 34.64 on groceries this week. I hope to be able to cash in on a few more deals.
Safeway Saturday I want to get the B1G1 pumpkins and also the nabisco crackers and .79 golden grain pasta. I also want to get the B1G1 lunchables with water. Today I went and I didn't realize my coupons (that I've been hanging on to for a great deal) were expired. I had to come home and print off some new ones I believe they were 4.19 and I will use 2 $1 off coupons making them 2/$2.19 that's the kid of deal I've been looking for.
I have $15 to spare I hope I can do everything I want to be able to do. I'm keeping a running total of my grocery spendings in my binder.

I did some price checking using the post from athriftymom.com 50 items under $1 at Walmart. I didn't look at everything but here were some items that were pretty good and some things I didn't see.

Toys R Us Candy Deal

In looking over the ads today I noticed that Toys R Us has candy 50% off (regular price 3.49) $1.74 great deal with coupon.
Also for those people out there with babies, Toys is offering a $10 gift card with the purchase of 3 Enfamil powder formula 23.4 oz or larger. If you scored a $5 off coupon this could be a good deal. I'm not sure how much they cost it doesn't say in the ad.
I'm waiting for Black Friday to get the great toy deals.

FREE! I thought I was done shopping for the week but after football today the boys wanted a special treat. We were right by Winco so we went in. The snuggle fabric softener was $2.98 after $3.00 off it was free. Funny how I can't just run into the store without looking for a deal.

Safeway

Last night Ace ran into Safeway to get me the cookies. He asked the checker about taking store coupons and manufacture coupons and he said yes they take them and since I have been getting so much crap why don't we just use the self check out and scan our own coupons. I thought that was a great idea. So if you want a pleasant trip to the Safeway in Rocklin self check.

Foods Co and I'm done for the week

I made a really quick trip to FoodsCo after picking up the kids from school. I used one coupon which was for $1 off produce when you bought 2 frito lay chips.
I spent 10.38 for 8 items. FoodsCo usually has some really good sales on stuff.
Pork Chops were on sale for 1.17lb I paid 3.62
Doritos were 2/$4 (better deal to be had saturday at safeway)
Yellow onions were .98 for 3lbs
2 hot house tomatoes for 1.17 (this wasn't a good deal I just needed some)
2 5 lb bags of potatoes were .67 each!!

All in all a great week. I'm a little over budget for my goal of $50 a week this week by $13 but I'm happy with that.

I learned something new today. That is that all stores don't stack coupons. I went to Savemart today and they had danactive on sale for 1.99 and I bought two and had $1 off coupon for each and also a catalina for $1 off when you buy 2 and SaveMart would not accept it. I have an email into them to find out what their coupon policy is.

Shopping with my Meghan is always such a treat. She wanted to get some credit for this trip I guess!
For some reason I don't get at least one discount when I go to Safeway-so check your receipt before you leave! This time I didn't get the $5 discount for the juice that I mixed and matched I got it for the Mott's apple juice because I bought 5 of those. So I did have to go to customer service to get my money back.

Chocolate chocolate chip muffins

This is a food network recipe.
Ingredients
1 3/4 cups flour ( I used whole wheat normally I do half white half whole wheat all was to much)
2 tsp baking soda
1/2 tsp baking soda
2 tbs cocoa
3/4 cup sugar
3/4 cup chocolate chips plus 1/4 for sprinkling on top
1 cup milk
1/3 cup plus 2 tsp vegetable oil
1 egg
1 tsp vanilla

Preheat oven to 400 degrees and grease or put papers in muffin tins. Mix first 6 ingredients in bowl. Mix last 4 ingredients i0n another bowl. Pour liquid into dry ingredients and mix together. Spoon into muffin pan. sprinkle the remaining 1/4 cup chocolate chips on top. I baked mini muffins for 15 minutes. Regular muffins probably 20 minutes.

Chimichangas

In the crock pot put a roast I use tri tip roast. Mix together 1 can beef broth and 1 packet taco seasoning. Pour over roast and cook on high 6 hours. Shred. Next add spanish rice ( I use rice a roni) , black beans and cheese to tortillas.

I also made these breakfast burritos and put them in the freezer. I used eggs, sausage, potatoes and cheese. Rolled them up and put them in the freezer. I bought the big thing of tortillas from sams club. I also made chicken burritos for the freezer. I love to have yummy food on hand. Ace will grab one and take it for his lunch.Roll up and either cook or put in freezer. I either cook in a frying pan and fry in butter for a few minutes on each side until golden brown or cook in the oven 350 degrees for about 20 minutes.

Ingredients
1/2 pound sausage
3 tbs. butter
3 tbs. flour
2 cups milk
pepper to taste
biscuits
This was the first time I have ever made biscuits and gravy and it was pretty good.
Cook sausage. Remove sausage from pan. Melt butter in sausage grease and add 3 tbs. flour. Mix well then add milk stir till thick like gravy add sausage and pepper cook a few more minutes. Serve over biscuits.

Bigger is not always better

I found the post on http://www.athriftymom.com/ about buying a bulk item with a high value coupon. So basically here is the example she used.

say you have a $2 off coupon for chinet plates 36-72 count.
the 36 count plates are $2.50 and the 72 count plates are $4.50. Buying at the regular price the 72 count plates is a better deal. When you use the coupon the 36 count plates are $.50 a pack making them a little over $.01 per plate. If you bought the 72 count plate it would be $2.5 for the pack making them a little over $.03 per plate.

California

Holy moly does it really cost that much more to live in California. I know real estate costs more here as the only reason people move from here is to find a cheaper place to live. I had no idea groceries and everything was so much more. So my new question lately when I do hair is the cost of food in different states. Everyone tells me it is so much cheaper elsewhere. I had no idea but I was wondering when I looked at other coupon blogs and the price they pay verses here. Everytime I went to the store it was more. I guess you get what you pay for so we must live in a great state.

Coupon binder

I was waiting for Rachel to post a pic of her coupon binder. Here's mine Rachel picked it up for me on sale. I love it!
I have about 20 dividers and I use the boys baseball card things to put my coupons in order.
My big boys want their own coupon binders. Here JO is cutting out coupons and putting it in his binder. So far the boys have cut out fast food coupons for their binder. Good times!




Crockpot chicken and rice

Ingredients
3 chicken breast ( I use boneless skinless frozen, I only started putting frozen chicken in the crock pot a few years ago. It is much more moist any yummy and supper easy to not have to defrost it.)
2 cans cream of chicken soup
1/2 cup water
4 ounces cream cheese
1 tsp. Italian seasoning

Put all the ingredients in the crock pot and turn on high. After about 2 hours stir up. Cook 3 more hours and enjoy over rice.

Hash

Ingredients
1 package frozen cubed hash browns
1 pound bacon cooked and crumbled or sausage or both
2 cups shredded cheddar cheese, divided
8 eggs
2 cups milk

In a large bowl combine hash browns, bacon and 1 cup cheese. Spoon into a greased 13x9 inch pan.
In another bowl beat eggs and milk. Pour over hash brown mixture.
Bake uncovered 350 degrees for 1 hour. Top with remaining cheese bake 5 more minutes.
